Sauerkraut is a German dish made from fermented cabbage. It is usually seasoned with caraway seeds and vinegar, and can be served either cooked or raw.

 1 qt Sauerkraut
 2 tb Butter
 1 ea Onion, chopped
 1 ea Potato, grated
 1 ts Caraway seeds

Melt the butter and add the onion and cook until brown.

Add the sauerkrautand cook for 8 minutes.

Add the caraway seed and potato, cover with boilingwaterand cook for 30 minutes in an uncovered vessel over a slow fire.

Coverthe kettle and cook 30 minutes longer.

Brown sugar or an apple may be addedto give different flavor.
