Shish Taook – Chicken Shish Kebab Recipe

This chicken shish kebab recipe is hold-me-back delicious and features marinated meat, spices, sharp pickles, and citrus, which are balanced with a hint of smokiness.

 250 g Chicken breasts (without skin)
 ¼ cup Yoghurt (full fat)
 5 ½ Garlic cloves
  tbsp Tomato paste
  tsp Salt
 ¼ tsp Thyme (dried, 'Zaatar' in Arabic)
  tsp Arabic mixed spice (or All Spice)
  tsp Black pepper
  tsp Red chili (powder)
  tsp Paprika (powder)
  tsp Sumac
 ½ tbsp Olive oil
 ½ tbsp Lemon juice
 Sunflower oil

Make the marinade by mixing all the ingredients together except the chicken and sunflower oil.

Add the chicken and mix well. Cover the bowl and leave it in the fridge for at least 1 hour. (You can marinate the chicken overnight.)

To make sure the chicken doesn’t stick, first put an oven rack in and oven-safe pan and brush the rack with some sunflower oil. Skewer the chicken cubes and place them on the oven rack, then brush the top with some of the marinade. Put them in the oven and let them cook until halfway done (10-15 minutes). Take the chicken out of the oven, turn the skewers over, and brush the top with more of marinade. Then put them back in the oven until cooked (about 10 minutes).
