Shorabet Zahra – Cauliflower Soup Recipe

INGREDIENTS

 188 g Cauliflower
 ¼ Potatoes
 ¼ Onions (large)
 ½ Garlic cloves
 ½ tsp Salt
  tsp Black pepper
 ¼ tsp Cumin (powder)
 ½ cup Milk (full fat)
 ¼ tbsp Olive oil
 ¾ cup Water
FOR GARNISH
 Parsley (chopped)
 Cumin (powder)

INSTRUCTIONS

In a pot, lightly fry the onions and garlic in the olive on high heat until the garlic releases its aromas.

Add the cauliflower, potato and spices (salt, black pepper, and cumin) and mix well.

Add the milk and water and mix. Cover and let come to a boil, then lower the heat to medium and leave to cook until the cauliflower and potatoes are soft (about 25 minutes). Careful not to let the milk boil over - if you see lots of bubbles forming, uncover, mix and recover.

Remove the pot from the stove and blend until smooth using a hand blender. If you find the soup too thick, add a bit of water, blend some more and put it back on the stove to boil on high heat for a few minutes.
