Sirloin tip roast with bacon is a dish that is made with a sirloin tip roast that is wrapped in bacon. This dish is usually served with potatoes and vegetables.

 3 lb tied sirloin tip roast
 ½ ts dried thyme leaves
 2 ea cloves garlic, slivered
 6 ea slices bacon
 2 tb Dijon mustard

Bone and tie the beef roast.

Cut slits into the roast and insert theslivered garlick,placing the pieces evenly around the roast.

Rub theroast with 1 tbsp.

ofthe mustard, and sprinkle it with the thyme.

Place the roast on aroasting rack.

Top the roast with the bacon, withthe ends covering the sides.

Inserta meat thermometer into the thickestportion ofthemeat and roast at 325 degrees until the thermometerregisters 145degrees for rare, or 160 for medium to well-done.

Transferthe meat to a serving board or platter.

Remove the bacon and string, thenreplace the bacon.

Pourthe pan drippings into a small skillet and whiskin the rest of the mustard.

Heat to boiling.
