Ingredients:6-8 small red potatoes, washed and quartered1/4 cup olive oil1/4 cup sunflower seeds, toasted1/4 cup Parmesan cheese, grated1 tablespoon parsley, choppedSalt and pepper, to tasteInstructions:1. Preheat oven to 400 degrees.2. Toss potatoes with olive oil, sunflower seeds, Parmesan cheese, and parsley.3. Season with salt and pepper, to taste.4. Spread potatoes in a single layer on a baking sheet.5. Roast for 20-25 minutes, or until potatoes are tender and golden brown.

Cut potatoes into 1 inch cubes and place in baking dish.
Sprinkle withsalt and pepper.
Cover with cheese and sprinkle nuts and seeds on top.
Bake at 350 degrees until cheese bubbles, about 10 minutes.
Then broilfor 2 minutes.
