A vegetable frittata is an egg-based dish that is similar to a quiche or omelette, but typically contains fewer dairy products. It is typically made with a mix of vegetables, such as onions, peppers, tomatoes, and spinach, and can be served hot or cold.

Pour overvegetable mixture and cook until golden on the bottom.
Turn over with abroad spatula and cook until other side is golden, or, without turning.
