A vegetable frittata is an egg-based dish that is similar to a quiche or omelette, but typically contains fewer dairy products. It is typically made with a mix of vegetables, such as onions, peppers, tomatoes, and spinach, and can be served hot or cold.

 1 ea Clove garlic
 ½ ts Dried rosemary leaves
 2 ts Canola oil
 1 x Freshly groun black pepper
 1 1/2 c Lefover vegetables
 ¾ c Egg substitute
 ½ ts Dried thyme leaves
 2 ea Egg whites
 ½ ts Dried basil leaves
 2 tb Grated Parmesan cheese

Mince garlic and saute in oil in a 7 skillet until softened.

Addvegetables and seasonings and cook very briefly, just to heat.

Beat eggsubstitute and egg whites together;stir in Parmesan cheese.

Pour overvegetable mixture and cook until golden on the bottom.

Turn over with abroad spatula and cook until other side is golden, or, without turning.
