Coffee Liqueur Mousse Recipe

 4 ea eggs, separated
 ¼ c coffee liqueur
 ¼ c maple syrup
  c cognac
 1 c water
 1 c whipping cream

In a blender or with electric beater, blend together egg yolks, maplesyrup and water.

Transfer to a saucepan and bring to a boil.

Removefrom heat and add coffee liqueur and cognac.

Chill.

Beat cream andegg whites until soft peaks form.

Carefully fold into chilled liqueurmixture.

Spoon into demitasse glasses, and chill 2 hours.
