Gingerbread Recipe

There are many recipes for gingerbread, but most include molasses, ginger, cinnamon, and nutmeg. Some recipes also include cloves, allspice, and/or ground pepper.

 1 1/4 c whole wheat pastry flour
 ½ ts ground ginger
 ½ ts baking powder
 6 tb butter
 1 ts baking soda
 ¼ c maple syrup
 ¼ ts ground nutmeg
 1 ea egg
 ¼ ts ground cloves
 ½ c unsulphured molasses
 ¼ ts allspice
 ½ c brewed organic coffee

Combine all dry ingredients, and set aside.

Blend butter, maplesyrup, egg and molasses.

Beat 5 minutes.

Add flour mixture in threeadditions, beating well after each addition.

Slowly stir in coffeeand beat again.

Pour batter into oiled 9 x 5-inch loaf pans.

Bake at350 degrees for 30-40 minutes.

Slice and serve warm.

If desired,serve with Lemon Curd or Mock Devonshire Cream.
