Orange Pork Tenderloin Recipe

 2 pounds pork tenderloin
 ½ cup soy sauce
 1 inch piece fresh ginger, sliced
 3 small cloves garlic
 1 cup orange juice
 of 1 orange, grated or peeled with a potato peeler
 ½ cup dry sherry or water
 ½ cup chicken broth or 1/2 cup water and 1 teaspoon chicken bouillon granules
 ¼ cup honey
 1 tablespoon cornstarch
 1 piece star anise
  Honey, to brush over meat
 2 tablespoons sesame seeds
 2 oranges, peeled and sliced

1. Place pork into shallow bowl.

2. In blender, combine the soy sauce, ginger, garlic and 1/2 cup orange juice. Puree.

3. Pour half the mixture over the pork. Add the orange peel. Cover. Marinate at room temperature for 2 hours.

4. In small saucepan, combine remaining soy mixture with remaining orange juice, sherry, chicken broth, 1/4 cup honey, cornstarch and star anise.

5. Heat to boiling. Stir and cook 1 minute until thickened. Strain.

6. Lift pork from marinade. Place on roasting rack in pan. Brush with honey. Sprinkle with sesame seeds.

7. Insert meat thermometer into meat. Roast at 425 degrees for 30 to 40 minutes to 150 degrees. Remove from oven.

8. Cover with foil. Let stand 10 minutes. The meat continues to cook.

9. Slice meat to serve. Garnish with orange slices. Strain pan drippings into sauce and serve immediately
