This recipe is for a meatloaf that has a southwestern flair to it. The ingredients include ground beef, diced green chilies, diced tomatoes, corn, black beans, and cumin.

2 lb Ground chuck
2 tb Taco seasoning
1 c Crumbled tortilla chips
1 Egg, lightly beaten
⅓ c Taco sauce
½ c Grated cheddar cheese
2 tb Taco sauce
½ c Ketchup

Combine ground chuck, chips, 1/3 cup taco sauce, seasoning, egg, andcheese.

Press into 9 x 5 x 3 loaf pan.

Bake 1 hour at 325 deg f.

Aboutfive minutes before end of baking time, combine remaining ingredients andspread over top of meatloaf, Continue baking.
